Greek yogurt replaces the mayonnaise in this healthy version of a sandwich favourite.

  • 4 slices Ben’s ® White bread

    2 hard-cooked eggs

    1/4 cup (60 mL) plain

    2% Greek yogurt

    1/4 tsp (1 mL) each salt, pepper and dill Pinch paprika

    1/3 cup (75 mL) diced avocado

    1/3 cup (75 mL) diced Roma tomato

    1 cup (250 mL) fresh arugula (loosely packed)


Mash together eggs, yogurt, salt, pepper, dill and paprika. Fold in avocado and tomato.

Spread egg mixture evenly over 2 slices of bread; top with arugula. Top with remaining slices of bread.
