Cutting the bread slices into rounds mimics a traditional cracker base for these toasts topped with pickled herring.

  • 8 slices Ben’s® Xtra Sandwich Wheat thick Bread, cut into rounds and toasted

    1/3 cup (75 mL) mayonnaise

    2 tbsp (30 mL) chopped chives, divided

    1 tbsp (15 mL) lemon juice

    1 tbsp (15 mL) chopped capers

    8 oz (250 g) pickled herring, drained and patted dry



Stir together mayonnaise, 1 tbsp (15 mL) chives, lemon juice and capers. Spread evenly over toasted bread.

Top with pickled herring and remaining chives.

• Alternatively, use chopped parsley instead of chives.
• Add 1 tsp (5 mL) of grated lemon zest along with lemon juice if desired.
