  • 3 tbsp (45 mL) Butter

    1  Shallot, chopped

    1  (12 oz/340 g) Package assorted mushrooms, sliced

      Salt and pepper

    1  Sprig fresh thyme

    4  Slices Ben’s® White Bread, toasted

    1/3 cup (80 mL) Shaved Parmesan cheese

    1/3 cup (80 mL) Grated Asiago cheese

    1/3 cup (80 mL) Grated Provolone cheese


HEAT butter in a large skillet over medium-high heat. Sauté shallots for 1-2 minutes or until fragrant and tender. Add mushrooms and cook, stirring for 3-4 minutes or until softened and evenly browned. Season with salt, pepper and fresh thyme.  PREHEAT broiler to high. Spoon mushroom mixture evenly between the four slices of toasted bread. Top with cheeses and broil for 2-3 minutes or until cheese is melted and bubbly.
